Once smoked, its rind becomes brown and its taste develops an intense, smoky aftertaste. The pungent aromas and the intense flavor make it perfect for aromatic cheese tastings.

Entirely made with top-quality cow’s milk and naturally lactose-free, smoked caciocavallo is manufactured by the gentle and experienced hands of our cheesemakers. The smoking process affects the taste of the caciocavallo adding subtle nuances of meaty, earthy, toasty flavor.

The thin, dark rind envelopes a white paste, which turns yellow during aging. The curd is firm and supple with irregular holes going from the center towards the rind.

 

Smoked caciocavallo: recipes

The intense aroma makes our smoked cheese a perfect match with honey and jams. It can also be eaten on its own.

To fully enjoy its flavor, we recommend letting it rest at room temperature for at least 30 minutes.
