Fresh ricotta is a low-fat cheese with a sweet and delicate flavor and a spongy consistency. It is a whey cheese made from cow’s milk whey and tiny bits of curd. We produce it in two variants, classic and with truffle. The classic ricotta cheese has a mild taste, while the truffle ricotta has a strong and intense aroma.

Lightness and versatility in an unmistakable shape.

Ricotta translates “recooked” in Italian. Indeed, it is a twice-heated curd intended to repurpose the leftover whey. Thus, it is referred to as whey cheese.

Ricotta is an extra-fresh light cheese creamy white in appearance. It has a bouncy and fluffy paste and a sweet and savory taste. It is well-appreciated by anyone thanks to its very fine, unobtrusive flavor. Easy to spread and slice with a fork, it is a favorite component of many Italian recipes.  

Our ricotta is made from pasteurized cow’s milk whey, ensuring the best quality and safety. It has a recognizable woven texture from being formed in a perforated basket mold in the shape of a truncated cone (fuscella). It is available in both classic and truffle variants.

Classic ricotta is available in two different sizes and weights ( 50 g and 250 g). Healthy and very low fat, it is suitable for dieters and pregnant women. Truffle ricotta is only available in the smallest size. It is classic ricotta with the addition of truffle cream. It boasts a strong taste with earthy undertones and an intense aroma.
