Primosale, also known as giuncata, is a fresh firm cheese with a delicate flavor and a soft yet crunchy consistency. Easy to slice, it is characterized by a sweet taste with sour and acidulous aftertones, which is reminiscent of fresh milk. Made from high-quality cow’s milk, Di Pasquo’s primosale is sold in three different shapes and sizes: classic primosale, giuncatina and mattoncino. Giuncatina is the smaller version while the mattoncino is the harder one.

Di Pasquo's primosale and little giuncata

The primosale cheese is a light Italian cheese with very ancient origins. It owes its name, literally “first salt”, to the cheesemaking technique used to produce it. Indeed, it maturates for a very short time in the cheese cellar and then is only salted once.
It is a rindless young cheese with a soft and creamy texture. The aroma is pungent and the flavor is mild with a touch of saltiness. The giuncata has a thin, semi-soft skin and a malleable, compact paste with irregular eyes. It is milky white in color. Our primosale is made with pasteurized cow’s milk and shows a characteristic basket shape with a striped texture.
Di Pasquo’s giuncata is available in three varieties: classic primosale, giuncatina and mattoncino. Different names, the same, unique flavor. Practical and versatile, the giuncatina (little giuncata) is a small primosale cheese. Sweet and creamy, it can be eaten on the go and is appreciated by both kids and adults. The mattoncino (little brick) is slightly harder than the classic primosale but has its same taste and aroma. It looks like a little brick, hence its name.
Being a low-fat table cheese, primosale helps you keep fit without sacrificing taste. The quality-controlled ingredients also make it healthy and safe to eat while pregnant.

Giuncata can be eaten alone as a starter, cut into cubes in a fresh salad or sliced and dressed with EVOO, pepper and salt. It perfectly pairs with vegetables and fresh tomatoes.
