It is a stretched curd cheese with a semi-hard rind and a firm yet elastic paste. It is made only using top-quality pasteurized cow’s milk. The external rind is smooth and thin and takes on different shades of color, from white to yellow-brown, depending on the aging period.
It is renowned for its iconic shape similar to a gourd or a teardrop with a small head. It is tied with natural twine around its neck. That's how it dangles from a rope for a minimum of 30 days, developing its edible rind. The practical twine makes it perfect to be hung easily, in the cellar or in a cool place, to extend the ripening process. With prolonged aging, it picks up pungent, earthy undertones and fruity aromas.
