It is an Italian typical fresh cheese with a semi-soft, pale-yellow skin and a white, firm and uniform interior. Sweet and delicate, it tastes as good as our classic mozzarella.

Di Pasquo's scamorza cheese
Scamorza appassita is a chewy and stringy cheese with a pear-like shape and a sweet and milky taste. It can be compared to a firm and dry mozzarella. Indeed, they both belong to the pasta filata family sharing the same cheese-making process. Once shaped, scamorzas are tied 1/3 of the way from the top and hung in strings to dry, hence their pear-like shape. This light aging process usually lasts about two weeks. During the ripening, the scamorza develops an edible, semi-soft rind.
Smooth and elastic, its melting consistency and piquant yet milky flavor delight your taste buds. The ribbon around its neck and the knoblike handle on top make it easy to hang wherever you want in your kitchen, tasting it when perfectly ripened.
Scamorza is made from pasteurized Italian milk and is gluten-free. It is indeed a safe food for pregnancy and celiac disease.
