Made from pasteurized cow’s milk, dried scamorza is a short-dried mozzarella with a pear shape and a waist on its top end. It is an Italian typical fresh cheese with a semi-soft, pale-yellow skin and a white, firm and uniform interior. Sweet and delicate, it tastes as good as our classic mozzarella.
