Coming straight from our tuff caves, Tufone is our longest aged cheese and an original creation of Lorenzo Di Pasquo. It is made according to our proprietary affinage techniques refined through careful research and lots of tasting. Its flavor-enriching aging process makes it unique. Tufone has a bloomy rind and tastes tangy and salty with earthy undertones.

With a thick and rough rind, our precious Tufone stays in our underground tuff caves for several months until emerging with a dense paste and the unique taste and color that make it unique. Patiently, it develops its flavor reaching high notes of spiciness and intense and irresistible aromas typical of gourmet cheeses. This results in a delicious, truly unique, extra-mature cheese.
With a long story and a lively essence, Tufone shows a tall and oblong silhouette with a hard and thick rind. Made from quality-controlled pasteurized cow’s milk, it develops a dense and firm interior. Its taste is mellow and spicy with a strong and pungent aroma.
Focused on aging our signature products, our professional cheesemakers always have a hand in the entire cheesemaking process through the final step of cave aging. Their role is to respect traditional methods and release our flagship cheeses at their peak ripeness.
