Extra-ripened and naturally lactose-free, our cave-aged caciocavallo cheese is mellow and slightly piquant. It has an intense scent. The interior has characteristic (partridge-eye) holes of varying sizes, while the exterior is bloomy with a hard rind. It flourishes in our caves for an aging period of over 8 months.
We carefully select special caciocavallos with incredible aging potential and we finish it in our tuff caves for full maturation. Ripening is an essential process when making cheese. Indeed, each product needs to be aged properly in the right temperature setting to get the best flavor, consistency, and color. Underground tuff caves offer the ideal environment and conditions for ripening cheeses.
With persistent aging, the cave-aged caciocavallo picks up deep, earthy undertones and sharp, spicy flavors. It turns from a pearl-white to a darker yellow and becomes saltier. During ripening, the interior paste might lose moisture and weep.
