Caciocavallo Silano PDO (DOP in Italian) is a tangy and stringy Italian cheese with a semi-hard paste and an ancient history. It has a meaty flavor with hints of almonds and is naturally lactose-free. Complying with all the directives of its production specification, our Silano is manufactured using only thermised cow’s milk and is aged for at least 30 days before being sold. Its flavor develops over time. When young, it is sweet and creamy, when aged it becomes more salty and hard.

Di Pasquo's Caciocavallo Silano PDO
Caciocavallo Silano is one of the oldest Italian aged cheeses. It is characterized by a distinctive flavor, intense but always balanced. It is very popular in Southern Italy. The denomination of protected origin (PDO) proves that it is only made with thermised cow’s milk following the regulations. Its name comes from La Sila, the mountainous plateau located in Calabria, Italy.
Despite the name, Caciocavallo Silano is not exclusively produced in Calabria. Indeed, it is also produced in 5 additional Italian districts specified by the regulations. We produce our tasty Silano DOP in Agnone, Molise, strictly following the directives.
Our Silano has a thin and smooth rind pale-yellow in color. Its paste is slightly hard, uneven and with a few small holes. It ripens for at least 30 days and varies its taste according to its age going from a sweet flavor to a more piquant one.

You can enjoy this gourmet caciocavallo alone, fresh or grilled, or you can pair it with vegetables, cured meats, pizzas and baked pasta. It perfectly matches with red wines.
