Burrino, or else manteca, is a cheese with a butter filling. In short, one of a kind. Indeed, it has a double structure comprising an exterior layer of stretched-curd, semi-mature cheese and an inside layer of butter. It has a pear-like shape with a small head and a narrow neck. The rind is salty, solid and semi-soft, while the interior is creamy and obviously buttery. It is made from cow’s milk and is sold as it is or stuffed with butter and truffle cream.

A little caciocavallo with a tasty and buttery heart.

Burrino, also referred to as manteca, is a pasta filata cheese made from pasteurized cow’s milk stuffed with butter. It is a smaller version of our handcrafted caciocavallo with a heart of fresh butter. The external stretched curd is molded, hardens and ages around a knob of butter. Solid on the outside, creamy and soft on the inside, its contrasting texture makes it one of a kind.

Burrino is a fresh and short mature cheese that is left to ripen for several weeks. It has an elongated pear shape and is tied near the top before being immersed in hot water. It has a straw-white, smooth and solid rind and creamy and sweet inside. It seems it has been invented to preserve the butter before refrigeration, especially on warm days.  

The truffle manteca encases a soft and creamy heart of butter combined with truffle cream. Its texture is creamy while the aromas are earthy and pungent.

 

Burrino: recipes

Burrino is usually consumed by eating the butter first, spreaded on a slice of crusty bread, and then the caciocavallo cheese. It can be used in many ways. For example, you can use it to flavor a bruschetta or a pasta dish.
