Il regno dei Caciocavalli

AGNONE – Si è concluso ieri il progetto educativo che ha coinvolto l’Istituto Omnicomprensivo di Guglionesi and the Caseificio Di Pasquo, azienda agnonese che in tre diversi appuntamenti ha ospitato circa cinquanta alunni, con una età media di 7 year old, nello stabilimento produttivo alla scoperta della filiera di produzione.

Si parla sempre più spesso di corretta nutrizione ed educazione alimentare, disciplina che – vista la crescente insorgenza di patologie connesse a disturbi alimentari, trova sempre più spazio nelle offerte formative di scuole di ogni ordine e grado.

Istituto-Omnicomprensivo-Guglionesi-visita-Caseificio-PasquoFortunatamente, from year to year, sono più diffuse le iniziative pensate per sensibilizzare gli alunni di tutte le fasce di età a partire dai più piccini. Le cattive abitudini sono dure a morire e prima si comincia a combatterle e prima arriverà la vittoria.

Proprio per questo non stupisce la scelta dell’Istituto Omnicomprensivo di Guglionesi che ha messo su un progetto dedicato prevedendo addirittura, per gli alunni di seconda elementare, la visita in una delle aziende casearie regionali. A ricevere i 47 infanti il Caseificio Di Pasquo che tra il 28 aprile e il 9 maggio ha organizzato tre visite guidate all’interno del dipartimento di produzione.

I silos di stoccaggio del latte, la pastorizzatrice, le vasche polivalenti e le due linee di produzione sono state tutte tappe di una visita che ha permesso agli studenti di conoscere, step by step, gli step di produzione fino all’arrivo in tavola.

Come era prevedibile, ad attirare particolarmente l’attenzione dei partecipanti, sia il nastro trasportatore impiegato per lo spostamento delle mozzarelle (protagonista del “tuffo della mozzarella") che la cella di stagionatura, in grado di contenere diverse migliaia di Caciocavalli.

Già perché non sarà facile trovare altri visitatori come Daniel (nome di fantasia per tutelare il nostro giovane ospite, ed), in grado di rispondere alle nostre domande, di porre quesiti difficili e di capire senza alcun problema i dettagli del processo. Difficilmente scorderemo Anna (nome di fantasia) che rifiutava la ricotta ma alla quale piacciono «i formaggi più stagionati perché sono saporiti». Soprattutto non potremo mai dimenticare Paola (alias) che a conclusione del tour ha commentato: «Wow! Ma qui siamo nel regno del Caciocavallo»!

Ancora una volta ci ritroviamo a scrivere post come questi con il cuore colmo di gratitudine perché ogni esperienza è un regalo e serve a ricordarci che la gioia, la curiosità e la vivacità di un bambino possono emergere anche tra i rumori delle macchine di produzione.

I paesaggi
Se vivi in città, sono proprio i paesaggi la prima cosa che ti colpisce di Agnone. Da ogni punto di ingresso, in fact, si gode di una vista mozzafiato sui campi, le vallate e le colline. Tra questi però ce ne sono un paio particolarmente significativi sia per la nostra storia aziendale che per quella di Agnone, la cittadina che ci ha visti nascere, crescere e che ci ospita ancora. Sono le due boilers di rame, due grossi recipienti stagnati all’interno, usati per il riscaldamento del latte o per la produzione della ricotta.

Tra le tappe del nostro tour infatti non manca una sosta davanti alle caldaie utili anche per svelare ai nostri ospiti il passato ramaio di Agnone. Sono ancora in molti ad ignorare che la nostra cittadina non era famosa solo per la fusione di campane e bensì che ci fosse anche una fervente attività ramaia. Lungo le rive del fiume Verrino c’erano sparpagliate diverse fonderie dove il rame veniva fuso, per poi essere portato in paese. Qui, le mani di esperti artigiani lo lavoravano per creare manufatti come tine, tinelli, mestoli e utensileria che venivano venduti anche oltre i confini regionali.

Oggi sebbene non ci sia più nessuna fonderia del rame attiva, è ancora possibile assistere alla battitura e acquistare manufatti in rame. Agnone, sono tre i negozi specializzati nella vendita di questi oggetti e in due di questi è possibile anche vedere gli artigiani all’opera.

Inoltre, in 2015 è stato inaugurato anche il “Museo del rame” una struttura museale in cui è possibile riscoprire la filiera del rame e venire in contatto con le tecniche di lavorazione e toccare con mano la storia di una tradizione che fece conoscere Agnone anche nelle piazze lontane. Infine, per completare il giro il gestore dello stesso museo può organizzare, su richiesta, un tour guidato proprio in una delle Antique Copper Foundries, un tempo protagoniste del processo di trasformazione.
